Ah, advertising.

Amidst another of my extreme bouts of procrastination, I stumbled upon something truly astounding.

Fajita Pizza

Can’t decide between Mexican and Italian? You don’t have to with this recipe. Pizza and Mexican are my boyfriend’s two favorite foods, so, we combined them in this delicious fajita pizza!

Ingredients

  • 1 small can tomato paste
  • 1 medium can diced tomatoes with green chilis
  • 1/2 small onion, cut into thin strips
  • 1 bell pepper, cut into thin strips
  • 2 boneless, skinless chicken breasts
  • 2 cups Mexican-style shredded cheese
  • 1 package Boboli pizza bread
  • 1 package fajita seasoning
  • 1 tbs. canola oil
  • 2 handfuls of fresh cilantro
  • 1 lime, cut into wedges

Preparation

Preheat oven according to the direction on the Boboli bread (approx. 425). Cut chicken into small chunks and saute in the canola oil until cooked almost all the way through. Add about 1/2 the package of fajita seasoning to the chicken, stir and turn off the heat. In a bowl, combine the tomato paste, diced tomatoes and the rest of the fajita seasoning, and stir. Spread the tomato mixture onto the pizza crust and sprinkle on one handful of cilantro. Spread the cheese over the sauce and top with chicken, onions, and peppers. Sprinkle the rest of the cilantro on top. Put the pizza directly onto the oven rack and bake for 8-10 min. Serve with lime wedges.

This recipe is quick, easy and sure to please. Pop open a Corona and enjoy!

The Conclusion of the Cornflake

Spoiler alert: Go back and read the other blogs first!

Finally, it’s all over.  Emily and Melissa sold their prized cornflake on eBay for $1,350 to a Monty Kerr (TriviaMania.com) of Austin, Texas. Kerr plans to use the cornflake as part of a traveling museum of American pop culture. He plans to send someone to retrieve the flake in person.

While it is not quite as momentous as the bids for the original cornflake, I am very impressed that a legitimate bidder won the coupon for such a large sum of money. According to the article, they plan to use the money for a family vacation. Perhaps a visit to Illinois…

Copycats have been popping up. There have been other flakes shaped like Virginia and Hawaii, and a potato chip bearing the likeness of Florida. The cornflake has apparently gained somewhat of a cult following. You can purchase a fresh and stylin’ T-shirt here:

Quick and Easy Salsa

How many of you go to a Mexican restaraunt and fill up on chips and salsa before you’ve even ordered your meal? I definately do. Chips and salsa are the Sonny and Cher of the food world and quite possibly my favorite snack. Because it’s one of my favorites, I’ve become what you might call a salsa snob. I like fresh salsa and I like trying new recipes. So, after experimenting with countless variations, I’ve settled on a “go-to” recipe for classic tomato salsa. It goes as follows…

Ingredients

  • 1 can fire roasted tomatoes with garlic, drained
  • 1 can chipotle stewed tomatoes, drained
  • 1 can diced tomatoes with green chilies
  • 1/4 medium onion, chopped
  • 1 bunch cilantro leaves, finely chopped
  • 1 lime
  • 1 tbs. minced garlic
  • 1 small can green chilis, drained
  • 1 habanero pepper, finely chopped
  • 1 small can corn, drained (optional)

Preparation

In a blender, add drained tomatoes, onion, 1/2 can green chilis, garlic, juice from the lime, and 1/2 the habanero*. Blend together on a low setting to maintain a chunky consistency. Add chopped cilantro and drained corn (if you’re using it) and mix with a spoon. The salsa should be pretty spicy, but if you like it hot, add the rest of the habanero and green chilis. Serve with tortilla chips.

You really can’t go wrong with this recipe and you can add more or less peppers to make it as spicy as you’d like. Plus, it’s so easy! Refrigerate what you don’t eat and enjoy for up to two weeks.

*Including the seeds makes it really spicy. Leave them out if you prefer.

The Cornflake Update

For those of you who are just tuning in (cough cough, where have you BEEN?), check out my last blog first! This one will make way more sense!

I know you have all been holding your breath, crowded around your MacBooks and stalking eBay for the results of the Great Illinois Cornflake Auction of 2008.

Well, Ebay shut it down. Before you go writing letters to your congressmen (slash women, or people), boycotting eBay, and rioting in the streets, sit back and read on:

According to Colorado’s News Leader (aka, 9News), the cereal relic violated eBay’s food policy. (Let the record show that I was unaware of such a policy.)

Ever the inquisitive mind, I called the McIntire household and spoke with Melissa McIntire, who was the official seller on eBay. She confirmed that the item was, in fact pulled. But the sisters are not deterred. They have revamped their strategy. In order to get around the rule, they have a coupon up for bid. The winner of this bid can then redeem the coupon for the treasured cornflake. According to Melissa, the current bid for the coupon is $1025. She went on to say that for them, it is not really about the money. They have received interest from all over the world, including from major media outlets such as Fox News. She said that they are just “having fun.”

My sincere hope is that somewhere out there, there is a lover of unique corn products who will be genuinely generous in his or her bidding.

The Great Illinois Cornflake

I cannot believe this.

It is the most ridiculous thing I have ever seen in my life.

My best friend, Sarah McIntire’s sister, Emily McIntire, found a cornflake bearing a remarkable resemblance to the great state of Illinois. I suppose this would not normally be considered “news,” except for one thing: Some schmuck wants to buy it.

Their parents jokingly suggested that she put the relic on eBay. She did, as a joke. At last look, the bidding was $199,300 I am not even making this up. I really hope someone is willing to pay for this. Bidding ends Thursday, so hurry and go bid!

The family resides in Chesapeake. Emily, 15, is the youngest of the five McIntire sisters.
