The decision to entertain and have guests over inevitably comes with a catch — they want to be fed. Bruschetta is a tasty appetizer that can be the perfect fix for this dilemma. This Italian snack also makes the perfect side for any pasta dish and is a great substitute to calorie-rich garlic bread. Making this creation is effortless and will leave your guests craving more.
Prep Time: 20 minutes
Cook Time: 10 minutes
Ingredients:
½ of an onion
1 green bell pepper
1 tomato
1 cup grated cheddar cheese
1 baguette unbaked French bread
Olive oil
Directions:
1. Preheat oven to the broil setting.
2. Slice the baguette down the middle, then continue to cut up both halves so that there are 10 individual servings. An already-baked baguette can also be used, but it may turn out too crispy when it’s baked again.
3. Chop onion and tomato into small cubes and set aside.
4. Slice off the top of bell pepper and then cut in half so that it lies flat. Scoop out the seeds and dispose. Chop pepper into small cubes.
5. Grate one cup of cheddar cheese. When finished, mix onion, tomato, pepper and cheese together in a bowl.
6. Pour two tablespoons of olive oil on each slice of bread. Spread olive oil evenly with the back of a spoon or with a knife. Place and spread the bowl of mixed ingredients evenly over the bread slices.
7. Broil bruschetta for 10 minutes or until cheese begins to brown.
8. Allow food to cool. Serve when ready and enjoy!
